Recently I asked my viewers what do they want me to make next on youtube and one of my lovely viewers suggested "Cream Cheese Cookies" which I had never heard of.
After some researching I settled on this recipe and its one of my new favourite cookie recipes, yes it takes time to prepare but you can store these in your freezer, so when you have that hanking for a cookie, you can just pop into your freezer and 20 mins later, you are in cookie heaven.

Ingredients - Makes about 25 cookies
120g unsalted butter softened
60g cream cheese softened
140g light brown sugar packed
50g granulated sugar
1 large egg
10ml vanilla extract
300g self-raising or all-purpose flour
5g baking soda
Pinch of salt
200g of milk chocolate chips
To the bowl, if you are using a stand mixer, use the paddle attachment, combine the butter, cream cheese sugars, egg, vanilla, and beat on medium-high speed until well-creamed, light and fluffy, about 5 minutes.
If you are using an electric hand mixer and beat for at least 7 minutes.
Then add the flour, cornstarch, baking soda, optional salt, and mix until just combined, about 1 minute.
Add chocolate chips and lightly mix into the mix.
Make balls of dough just a bit bigger than a golf ball size and add them to a lined baking tray and refrigerate for at least 2 hours, or up to 5 days, before baking.
Bake in a pre-heated oven 180c 350F for about 20 mins until golden brown.
Allow the cookies to cool on the tray for 5 minutes before transferring them to wire rack to continue cooling.
Store in an air-tight container for a week, if they last that long.
