Home Made Key Lime Pie

I have been craving this for some time and I though its my birthday, so why not make a killer cake to celebrate ? 

Its got that great tart taste but yet smooth and creamy, if you love lemon cheesecake, why not try a different citrus and give this a go. 

 

Ingredients - Make this pie in a 23cm pie plate

Bake in a pre-heated oven at 180c 350f for 10 minutes until golden and allow to cool. 

For the Filling
4 egg yolks
400g can sweetened condensed milk
20g tablespoon finely grated lime rind
125ml lime juice

Bake in a pre-heated oven at 180c 350f for 12 minutes until set.

To Serve
300ml thickened cream, whipped
Additional lime slices cut fine and lime zest
